We are pleased to invite you to an exceptional tasting at Livre de Cave, in the presence of winemaker Maxime Ullens and oyster farmer David Hervé, featuring a comparative oyster tasting.
A former Belgian architect who settled in Champagne in 2012, he created his estate from scratch in the Massif de Saint-Thierry. A passionate and innovative winemaker, he crafts his wines with a highly personalized approach, notably through fermentation in oak barrels made from wood sourced from the forest surrounding his estate, as well as several years of experimentation in wine aging, including the use of sandstone barrel bases.
His work was recognized in 2020 by the Gault & Millau guide, which named him Winemaker of the Year.
Today, the estate produces around 30,000 bottles per year, with the ambition of building a distinctive house signature over time.
