Originally from the Jura, Nicolas Jacob embodies a new generation of committed and exacting winemakers. A former organic market gardener, he trained alongside iconic figures such as Jean-François Ganevat and at the Domaine Macle before taking over vineyard parcels in 2015 located in the terroirs of L'Étoile and Voiteur, in the heart of the Sud Revermont.

At the head of a 6-hectare estate planted predominantly with white grape varieties, he practices organic viticulture and favors natural winemaking without additives or added sulphur, relying on spontaneous fermentations and often extended ageing. Vinified parcel by parcel, his micro-cuvées express with precision, energy and finesse the full authenticity of Jura’s terroirs, establishing Nicolas Jacob today as one of the rising signatures of the region.
